Maison Yoshoku frames the room as Western comfort with Japanese craft. CapitaLand’s Raffles City directory carries the same unit and treats the dessert omakase bar as Singapore’s first of its kind.

Hours

The restaurant is open daily. Lunch runs from 11.30am to 3pm, with last order at 2.30pm. The dessert bar is open from 3pm to 10pm, with the last dessert omakase order at 9pm. Dinner service is 5.30pm to 10pm, with last order at 9.30pm.

Three strands on one floor

The site splits the offer into Hitsumabushi Lunch, Yoshoku À La Carte and Dessert Omakase. Lunch reworks grilled protein over rice in the hitsumabushi format, including fish such as seabass meuniere. Dinner leans on Japanese-Western comfort plates such as grilled spring chicken.

Hitsumabushi here is eaten in four stages: first with salt, then with demi-glace, then with pickles, and finally with warm dashi poured over as an ochazuke-style finish. Lunch mains run from orange and rosemary chicken at $30 to black garlic wagyu at $40, with farm seabass meunière, garlic and shiso prawn and sansho unagi kabayaki at $35. The Maison Journey lunch set is $68 nett with a starter, hitsumabushi, chawanmushi, dessert and coffee or tea.

The dessert bar

The dessert omakase is a seven-course menu called The Seven Memories. It opens with green apple, lemongrass and kaffir lime, moves through kinako with kuromitsu and a nitrogen-frozen yuzu meringue with yuzu kosho sorbet, and closes with red miso and shiso.

Booking

Reservations run through the Oddle link on the restaurant’s site. Raffles City sits above City Hall MRT.
