ANTI:DOTE at Fairmont Singapore Welcomes Gabriel Carlos for a One-Night Filipino Cocktail Experience

ANTI:DOTE at Fairmont Singapore is hosting a one-night-only guest shift on Thursday, 16 July 2026, and the man behind the bar is Gabriel Carlos — a bartender who spent more than 15 years shaping Singapore’s cocktail scene before heading home to the Philippines.

A Return to Singapore

Now Co-Founder of The Basement Cebu, Gabriel has carved a name for himself by championing Filipino ingredients and bringing cocktail culture to a wider audience — reinterpreting familiar classics with local produce and botanicals. For this special night, he returns to the city where his career took shape.

Four Cocktails, One Night Only

Gabriel will present four exclusive cocktails (S$24++ each), each inspired by Cebu’s history, produce and culinary traditions. The drinks are crafted in partnership with Código 1530 Tequila, weaving together the flavours of two cultures in a glass.

Filipino Bites to Match

ANTI:DOTE has put together a menu of Filipino-inspired bar bites to complete the experience. Expect Lumpia, Lechon Kawali, Corned Beef Pandesal and Turon Fritters — a full celebration of Filipino food and drink under one roof.
