ANTI:DOTE x Gabriel Carlos: What to Know for 16 July

Gabriel Carlos, co-founder of The Basement Cebu, is scheduled for a one-night guest shift at ANTI:DOTE on Thursday, 16 July 2026. Event information supplied to Little Big Red Dot lists four Filipino-inspired cocktails at S$24++ each, paired with optional Filipino-inspired bar bites. Because the public event listing does not state a start or end time, call the bar before travelling.

Checked on 15 July 2026. This is an independently edited planning guide based on the event material supplied to LBRD and public venue records. LBRD has not tasted the menu and received no payment or booking commission.

ANTI:DOTE’s official what’s-on page lists the bar’s regular daily hours as 8.30am to 1am and gives its dining contact as +65 6431 6156. Regular opening hours do not establish the guest shift’s service window. Ask specifically for the Gabriel Carlos event time, last order and whether a reservation is required.

What S$24++ means on the final bill

In Singapore dining, “++” normally means a 10% service charge followed by GST. IRAS’s price-display guidance shows 9% GST applied after service charge. On that conventional basis, one S$24++ cocktail works out to about S$28.78: S$24 × 1.10 × 1.09. Two would be about S$57.55 before food.

This calculation is LBRD’s arithmetic, not a quoted package price. Confirm whether any event-specific charge, minimum spend, deposit or cancellation term applies. Bar bites were named in the event material—Lumpia, Lechon Kawali, Corned Beef Pandesal and Turon Fritters—but prices and dietary details were not supplied. Ask about pork, allergens and vegetarian options before ordering if these affect your visit.

Build a realistic budget before ordering

A solo guest ordering one listed cocktail should set aside about S$29 before food. Two guests ordering one each would spend about S$57.55 on those drinks; adding food can take the evening well beyond S$80. A pair ordering four cocktails between them would reach about S$115.10 before bites. These are transparent scenarios, not spending recommendations, and they assume every drink remains S$24++.

Ask for the event menu before the first order and read the listed volume, ingredients and price. A cocktail’s name or cultural inspiration does not reveal its alcohol strength or allergen profile. If the point of the visit is Carlos’s guest menu, confirm which drinks he will personally prepare and whether the full selection is available throughout the shift.

Who is Gabriel Carlos?

The organiser describes Carlos as a bartender who worked in Singapore for more than 15 years before returning to the Philippines and co-founding The Basement Cebu. The event’s editorial interest is therefore a return visit: a bartender shaped partly by Singapore’s bar scene presenting drinks through Cebu ingredients and stories.

That biography and the menu description come from organiser-supplied material; LBRD did not independently interview Carlos for this preview. We have removed promotional superlatives and do not claim that the drinks are “must-try” without a tasting. The useful question for a prospective guest is whether the one-night format, tequila base and Filipino flavour direction match what they want.

A guest shift is also different from a permanent menu launch. Ingredients may be limited, the bar can be busier than usual and a visiting bartender may rotate duties with the resident team. Ask rather than assume if meeting the guest or ordering a specific drink is essential to the booking.

Getting there and what to confirm

The Raffles City directory independently confirms ANTI:DOTE’s Fairmont location and telephone number. City Hall MRT is the most direct rail stop through Raffles City. Before leaving, confirm:

  • the guest shift’s actual start time and last order;
  • whether walk-ins are accepted or seats are reserved;
  • whether all four cocktails remain available;
  • food prices, allergens and dietary suitability;
  • the cancellation or deposit rule, if a booking is taken.

A responsible one-night plan

A four-cocktail menu is not a recommendation to order all four. Decide a limit, eat, alternate with water and arrange transport before drinking. Health Promotion Board’s responsible-drinking guide advises tracking drinks, avoiding top-ups that make counting difficult, and not drinking before driving or other risky activities.

Bottom line: the date, location, guest and S$24++ headline price are clear; the service time and full food bill are not. Call +65 6431 6156 before travelling, budget about S$28.78 per listed cocktail after conventional “++” charges, and treat the supplied menu as subject to availability.
