The move was confirmed by The Straits Times on 26 August 2026, alongside the reason the Hilton site is changing hands: Nancy Silverton is converting the old Mozza space into chi SPACCA, a wood-fired Italian grill concept, for a one-year residency starting in the fourth quarter of 2026.
What changes on the ION Orchard menu
The new site does not have a wood-fired oven, and Silverton says the dough she built for Hilton “works best in a wood-fired oven.” Rather than compromise that recipe, ION Orchard gets a new pizza alla pala: a longer, thinner pizza with fewer toppings and more crunch than the round, puffy style served at Hilton. Diners who go specifically for the current pizza style should treat 7 September as the last date to get it, since the format itself is not carrying over.
Why the move is happening now
The Hilton space is not sitting empty. Silverton is using the existing wood-fired oven there to run chi SPACCA, a meat-and-savoury-pie concept that explicitly excludes pasta and pizza. Andrew Ing, chief operating officer of OUE Restaurants, frames the one-year format as a deliberate test: “it gives us time to build awareness and get customer feedback and some real-time operating data” before committing to a permanent restaurant.
