Town Restaurant at The Fullerton Hotel Singapore is serving a Hong Kong dinner buffet with dishes created with a chef from its sister hotel in Hong Kong, until Saturday, 31 October. The From Hong Kong, with Love buffet costs S$98 per adult from Tuesday to Thursday and S$118 on Fridays and Saturdays.
The Hong Kong menu
The guest dishes come from Chef Joy Lui, sous chef at The Fullerton Ocean Park Hotel Hong Kong, and sit alongside Town Restaurant’s regular Treasures of the Sea seafood buffet. The Hong Kong dishes are:
- Cold marinated sea whelk, and chilled jellyfish with scallion oil
- Fried stuffed trio
- Satay beef noodle and curry fish balls
- Braised beef brisket with white radish
- Typhoon shelter prawns
- Hong Kong-style baked pork chop rice
- Lap cheong and pork belly claypot rice
- Egg waffles made to order
- Mango pomelo sago and double-skin milk pudding
- Hong Kong iced milk tea with red bean and grass jelly
The seafood on ice includes Boston lobster, snow crab legs, half-shell scallops, sea prawns, green mussels and Babylon snails.
Weekend barbecue
On Fridays and Saturdays an alfresco charcoal barbecue adds half-shell scallops with yuzu mentaiko bearnaise, sambal stingray with tamarind and calamansi, and barbecued prawn skewers with a citrus glaze. Sides include duck fat roasted sweet potato, wok-fried baby kailan and confit garlic mash.

- Tuesday to Thursday, 6.30pm to 10pm: S$98 per adult, S$49 per child aged six to 11
- Friday and Saturday, 6.30pm to 10pm: S$118 per adult, S$59 per child aged six to 11
