The Potato, Onion and Rosemary Rosti ($25) comes topped with smoked salmon, crème fraîche, poached eggs, salmon roe and chives. The vegetarian Centro Shakshouka ($22) simmers tomato, onion and housemade red pepper harissa with butterbeans, cannellini beans and spinach, topped with labneh and a poached egg, with grilled pita on the side.

Other options include Eggs Florentine on an English muffin ($22), a Pastrami and Corned Beef Hash with caramelised onions and toasted brioche ($24), and a vegetarian Cacio e Pepe spaghetti with pecorino, black pepper and a poached egg ($22). Sides include avocado, sautéed mushrooms, and extra smoked salmon or pastrami.
Sweet plates and drinks
Swedish Pancakes ($20) are folded with lemon curd, mascarpone, homemade marmalade and orange segments, served with a small jug of saffron orange sauce. Grilled Homemade Banana Bread ($14) comes with whipped maple butter and salted caramel sauce, and a lighter bowl brings blueberries, banana, candied pecans and Greek yoghurt.

Coffee is from Toby’s Estate, including a Salted Caramel Popcorn Latte ($7), with matcha from Matcha Project such as the Pomelo Oat Iced Matcha Latte ($7). Brunch cocktails start at $18, among them the Moneypenny Mimosa and Casablanca Bloody Mary, and the Curtain Call mocktail is $14. Free-flow prosecco is $60++ per person for 90 minutes.
