There is a new hand behind the bar at SKAI Bar, and it belongs to acclaimed Korean mixologist Solla Hyun Jung Park. The rooftop bar atop Swissotel The Stamford has appointed her as Head Mixologist, and she marks the occasion with SOLLA SYSTEM, a new cocktail menu built around the personalities of the twelve horoscope signs. It launches on 1 August 2026.
If you have ever chosen a drink based on your mood rather than the ingredients, this menu is designed for you. Each serve is matched to a star sign, so the ritual of ordering becomes a small act of self-discovery, whether you go by your zodiac or simply by the flavours you are drawn to that evening.
Twelve horoscope-inspired cocktails
The heart of SOLLA SYSTEM is a line-up of 12 horoscope-inspired cocktails, each one reimagining a classic serve through Korean influences, Singaporean flavours and house-made ingredients. Expect familiar templates reworked with a local and Korean accent, from a Strawberry Bramble to a Velvet Yuzu, a Pandan Sling and a Guava Paloma.
Four zero-proof serves for the elements
Non-drinkers are not an afterthought here. SOLLA SYSTEM includes four zero-proof cocktails inspired by the elements of Fire, Earth, Air and Water, developed with the same creativity and craftsmanship as the alcoholic list. It is a welcome nod to the growing number of Singapore diners who want a considered drink without the alcohol.
Who is Solla Hyun Jung Park?
Solla joins SKAI Bar from Jigger & Pony, following an earlier stint at Le Chamber in Seoul. She brings more than seven years behind the bar and a serious competition record, including Champion of the Giffard West Cup Asia and a Singapore National Winner title. That pedigree shows up in the details, right down to interactive illustrated menu cards that help guests find their cocktail by zodiac sign or by flavour preference.
When and where
