The concept pairs KOKO, the Japanese-style patisserie under GAIA Group, with Kawane Matcha, a Shizuoka tea farm the Ohashi family has run since the 1600s. Every cup traces back to the farm’s shading, picking, steaming, drying, sorting and grinding. Okumidori first-flush tencha from the 2026 harvest is freshly ground to order on the daily micro-mill, in limited quantities.

The atelier pairs centuries of tea farming with handcrafted cakes and pastries made with a contemporary mix of classic Japanese and French technique. Kawane sits in the mountains along the Ōi River in Japan’s largest tea-producing prefecture, where mist and mineral-rich soils slow leaf growth.
