The headline cut at Gamtan is King Galbi — a rare, hand-cut piece of Korean short rib that the team has positioned as their signature. It is the only restaurant in Singapore currently serving this specific preparation, and the cut is butchered in-house rather than ordered pre-cut from a supplier.

This level of butchery craft is unusual in Singapore’s K-BBQ scene, where many restaurants compete on volume and side-dish variety. Gamtan’s pitch is the opposite: fewer, better, more deliberate cuts.
