What’s on the Spread
The brunch brings together a Straits-inspired selection that reads like a love letter to Singapore’s diverse food heritage. Start at the cold seafood counter with freshly-shucked seasonal oysters, poached tiger prawns, and salmon sashimi. Move on to artisanal cheeses and a warming truffle mushroom soup before heading to the hot stations.
