Árō, chef Johanne Siy’s first restaurant under her own name, opens on Friday, 25 September 2026 at 15 Mohamed Sultan Road, the conservation shophouse that previously held Esora.

Peak Magazine put the tasting menu at S$268 a person and the room at 26 seats, with a shorter menu also planned for return visits. CNA Lifestyle’s 22 September preview named the same Friday opening and walked through a maiden menu built around under-sung ingredients rather than a single national cuisine label.
Hours and how the room is split
Service runs Thursday to Monday: lunch 12pm to 3pm and dinner 6pm to 10pm, with the restaurant closed on Tuesday and Wednesday. Seating is split across a counter for up to 10, two tables of four (up to 8), and a private dining room with four tables of two (up to 8).

What the opening menu highlights
Siy calls the cooking “creators’ cuisine”: ingredient-led plates that put producers next to more familiar luxury stock. CNA’s tasting notes name gamet seaweed from Ilocos grilled beside Gillardeau oysters; a custard of pili nut milk with jamón, fried capers, egg yolk sauce and Oscetra caviar; aged stingless-bee honey from Laguna with cheese crackers, blue cheese and lime gel; and Asin Tibuok, Bohol’s coconut-husk sea salt, grated over cucumber sorbet with citrus granita.
Carry-over signatures from her Lolla years also appear in slightly retuned form, including a spanner crab tart with aligue and an avocado dish with smoked eel. Japanese studio Keiji Ashizawa Design fitted the room in walnut, oak and rattan tones drawn from the pili nut. Peak also named beverage lead Jhonel Faelnar (ex-Atomix, New York) and pastry chef Elaine Ng (ex-La Dame de Pic at Raffles Hotel) on the opening team.
